Gustoria in Sangdo: the wine bistro Seoul regulars keep to themselves
Exit 5 of Sangdo Station, head toward Chung-Ang University, and look for the black staircase tucked behind a bus stop in the alley. That's Gustoria — a wine bistro that opened on November 11, 2020, and quietly became one of the most loyal-crowd spots in this part of southwestern Seoul. Chef Ji Min-gyu, a trained sommelier before he ever ran a kitchen, built the place around a single conviction: wine shouldn't feel intimidating. He doesn't lead with vintage years or appellations — he asks what you normally drink, then works from there.

The menu sits at about 30 dishes, all developed by Ji himself, and the through-line is a Korean-Western hybrid logic that makes the wine pairing feel natural rather than forced. The chicken cream risotto has a house-made soy sauce folded in. The wrap-style pizza — one of the two signature dishes — uses a housemade tomato sauce spiked with gochugaru for a spicy, savory edge. The gambas stands out because of a separate shrimp sauce built from roughly 100 dried mussels, roasted and blended down. The basil sauce alone uses somewhere between 15 and 20 ingredients. These aren't shortcuts — Ji sources fresh basil directly (he says the price difference between fresh and standard can run three to five times), and he personally does market runs to keep ingredient costs down without cutting quality.

Gustoria moved to its current, larger location on November 11, 2024 — exactly four years after opening day, which is a detail that feels very intentional. The original space across the street was only about 33 square meters; the new spot has room for the wine bottle display that greets you at the top of those black stairs. The bistro draws a date-night crowd — the source notes that around four couples who met here for blind dates went on to get married, with at least one returning after their honeymoon because the wife specifically wanted the food again. That's the kind of repeat business that tells you more than any review.

For a first visit: order the wrap pizza and the chicken cream risotto, let Ji or the staff recommend a wine based on what you usually drink (they'll ask in plain terms, not sommelier-speak), and don't skip the gambas if you're sharing. The neighborhood is Sangdo-dong in Dongjak-gu — not a typical tourist circuit, which is exactly why regulars treat it like a secret. If you're building a Seoul itinerary around Hongdae or Itaewon, this is a worthwhile detour for an evening meal, especially if you want a proper wine pairing without the formal-restaurant pressure.
