tvN's Undercover Chef hit 4.6% and held No. 1 for seven straight weeks. Chef competition formats are shifting away from taste panels toward real-world pressure.

Chef reality TV is evolving in Korea: Undercover Chef, Street Restaurant Fighter, and Black and White Chef S3

Undercover Chef debuted on tvN in May at 2.3% (Nielsen Korea, nationwide) and climbed to 4.6% by its second episode. The premise is simple: top Korean chefs Sam Kim, Jung Ji-sun, and Kwon Sung-jun (Napoli Matfia) hide who they are, take entry-level kitchen jobs at overseas restaurants, and prove themselves without their names attached. Seven consecutive weeks at No. 1 across cable and general programming in its time slot.

A second show arrived on the 21st of last month. Street Restaurant Fighter strips away even the judges. Roughly 20 participants—veteran chefs Lee Yeon-bok, Yoo Bang-nyeong, and Edward Kwon, plus celebrity restaurateur Hong Seok-cheon—run anonymous street stalls. The only scorecard is sales. No names on the door. No tasting panel.

Cultural critic Ha Jae-geun sees the pattern clearly: "Viewers want to verify whether their fame is a result of marketing or real skill." Stripping away reputation forces chefs to prove themselves blind. That reads as genuine. Critic Kim Hun-sik points to a generation that trusts real-world results and customer choices over prestige. Layering varied storytelling on top of competition has pushed the format forward.

Both critics flagged a danger. Kim warned that short-career "media-purpose chefs" prioritize screen time over actual work. Programs risk becoming pure marketing vehicles. Relentless competition can bury a chef's individual character. Ha agreed: "The production team bears responsibility for strict casting filtering." Participants themselves need to ask whether they belong in the spotlight.

(Food is the most instinctive human desire, Ha noted. Chefs with distinct personalities keep getting discovered, generating new stories. The demand side isn't going anywhere.)

Black and White Chef Season 3 is scheduled for the second half of this year. A large-scale team format will replace the individual competition structure of previous seasons.
