Ubaek Galbi is a charcoal-grilled beef short rib specialist in Jeonju, and the signature kkot galbi here are the real draw. These are cut from the 6th to 8th ribs of the cow—the meat stays attached to the bone, which means you get that rich juiciness and savory depth that makes Hanwoo worth ordering. The restaurant sources domestically produced Hanwoo 1++ rib meat and hand-selects each cut.

The menu gives you real choice. Beyond the signature kkot galbi (available in 600g for 2 people or 900g for 3), you can order Hanwoo 1++ rib meat straight, or go for the garlic-marinated version if you want that umami punch. There's also charcoal-grilled seasoned short ribs and Hanwoo yukhoe (raw beef) prepared southern-style—so you can build a meal around whatever beef experience you're after.
